Thursdays are for food videos. They've been for food videos for almost 4 years, even on vacation or in internet-free places. They are for food videos shot on boats, or in rental houses, or shot ahead of time and uploaded on Thursdays.
Today's is a recipe from the Ultimate Reset (the 21 day food-focus "reset" I am doing to give my shoulder a chance to heal. I've tweaked it a bit, but the bones are simple, beautiful, and delicious - and totally unexpected. I never would have thought that lime juice and sesame oil would work together. They do.
6 ingredients. About 5 minutes of time (after the lentils are cooked.) Time to chill - and it tastes even better the next day.
- juice of 2 limes
- 3 TBS sesame oil
- 1 TBS cumin
- 5 carrots, grated
- 1 bunch cilantro, chopped (don't like cilantro? Try this with mint. Oregano. Dill. Parsley. Lemon thyme mixed with watercress or arugula. Make it up and see how it goes!)
- 3 cups cooked lentils (one of these days I'm going to try it with Trader Joe's steamed lentils.)
Mix all ingredients together (I usually mix the dressing ingredients together first in the bottom of the bowl, then add the others on top.) Chill for up to 3 days. YUM!
